BUTTERNUT SQUASH AND APPLE STUFFING

Apple stuffed butternut squash is a great combination in this tasty recipe.  Chopped chestnuts compliment this delightful dish that is great in the fall or anytime of year!

Instructions
  1. Preheat oven to 425 degrees.
  2. Toss squash, sweet potato, apple, brussel sprouts, and sliced shallots with olive oil. Season the vegetable mixture with salt, pepper, and herbs. Roast on a baking sheet for 15-20 mins.
  3. Heat a skillet with a tbsp of olive oil on a medium-high flame. Add the celery and onions to the pan and cook until translucent. Stir in the chopped chestnuts and pecans. Allow mixture to cook for an extra 5 mins and then remove from the flame.
  4. Lower oven temperature to 350 degrees. Remove vegetables from the oven and transfer them to a deep baking dish. Combine the contents of skillet to your baking dish. Top with currants or raisins, vegetable broth. Season with salt and pepper and bake for 20 mins.
