  1. Bring a pot with water, salt, olive oil and rice to a boil. Reduce to a simmer and cook for 50 mins.
  2. In a deep skillet, heat soy sauce, sesame oil, and garlic. Add soybeans, zucchini and kale. Cook for 5 mins to soften.
  3. Arrange rice, sautéed veggies and avocado in a bowl.
  4. Top with sesame seeds, scallions and a dash of soy sauce.
