Instructions
  1. Preheat oven to 400 degrees.
  2. In a bowl, toss sweet potato, pumpkin, and red onion with olive oil and salt.
  3. In a second bowl toss chickpeas, kale, and mushrooms with olive oil and remaining seasonings.
  4. Line 2 baking sheets and spread out your raw veggies to roast. Sweet potato mixture will need 20-25 mins and the chickpea sheet will need 15 mins.
  5. Combine all ingredients for the dressing in a food chopper and pulse until creamy.
  6. Arrange your bowl with salad greens, roasted veggies and dressing to top it off. Garnish with pumpkin seeds.
