Cut your cauliflower head into steaks by slicing crosswise. Cut all the way through the cauliflower head into 1-inch Reserve any trimmings of florets for future use.
Prepare a baking sheet and arrange your steaks on the sheet. Drizzle with olive oil and season with salt, pepper, coriander and parsley.
Roast for 15 mins.
Bring a pot of water to a boil and cook your broccolini until it is al dente. Transfer to a bowl of ice cold water to halt the cooking process.
Heat 2 tablespoons of coconut oil in a pan and lightly sauté your crushed garlic. Add your broccolini and chopped chestnuts to the pan and remove from heat.
Serve the cauliflower steaks with your greens and enjoy!
* For a decadent twist, create a cream sauce by making a roux of 1 tablespoon of oil, 1 tablespoon of flour, chili flakes, and ½ cup of coconut milk. Whisk together and serve on your cauliflower steaks.
