  1. Preheat the oven to 350 degrees.
  2. Cut your cauliflower head into steaks by slicing crosswise. Cut all the way through the cauliflower head into 1-inch Reserve any trimmings of florets for future use.
  3. Prepare a baking sheet and arrange your steaks on the sheet. Drizzle with olive oil and season with salt, pepper, coriander and parsley.
  4. Roast for 15 mins.
  5. Bring a pot of water to a boil and cook your broccolini until it is al dente. Transfer to a bowl of ice cold water to halt the cooking process.
  6. Heat 2 tablespoons of coconut oil in a pan and lightly sauté your crushed garlic. Add your broccolini and chopped chestnuts to the pan and remove from heat.
  7. Serve the cauliflower steaks with your greens and enjoy!
Recipe Notes

* For a decadent twist, create a cream sauce by making a roux of 1 tablespoon of oil, 1 tablespoon of flour, chili flakes, and ½ cup of coconut milk. Whisk together and serve on your cauliflower steaks.
