Vegan Recipes


Although suitable for plant-based eaters choosing to follow a low FODMAP diet, our eggplant rollups will be enjoyed by everyone.  Simple to make and full of flavor, you may also add some vegan cheese to make them even more delicious.low-foodmap-eggplant-roll-ups

  1. Heat a grill pan and prepare the eggplant sliced by brushing each slice with olive oil. Cook 3 mins, turning once, until softened and lightly charred.
  2. Heat oil in a large pan with the spices.
  3. Add the quinoa stirring with the spices.
  4. Stir the boiling water into your pan and simmer on low for 15 mins until the quinoa is done.
  5. Allow to cool slightly, then stir in the other ingredients.
  6. Lay the eggplant slices flat and spoon in quinoa mixture. Roll up and serve.
Recipe Notes

Note:  Non-dairy cheese may also be included in the rollups.
