  1. Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat.
  2. Add the leeks, garlic, some salt and cook for approximately 8 minutes, adding veggie stock if needed.
  3. Add the carrots, potatoes, and green beans and cook for 5 more minutes, stirring occasionally.
  4. Add the veggie broth, bring to high, then lower heat to a simmer. Add the tomatoes, corn, spice as desired, and the pepper.
  5. Reduce the heat to low, cover, and cook until the vegetables are tender, approximately 25 minutes.
  6. Remove from heat and add the parsley and lemon juice.
  7. Season to taste.
