HAWAIIAN HUBBARD SQUASH SPREAD

Delicious spreads can be made from winter squashes.  Here is a recipe for a Hawaiian hubbard squash spread that is great on bread, bagels, or even with veggies.

Instructions
  1. Cut your squash in half and remove the seeds and pulp. Roast on 400 degrees for approximately 25 minutes or until tender.
  2. Scoop out the flesh from the skin and mash in a bowl. Discard the skins.
  3. Heat the oil and squash in the skillet and add the pineapple, sugar and seasonings.
  4. Transfer to a bowl and stir well to mix all ingredients. Serve and enjoy!
