Quinoa is a real super-food that perhaps does not get enough recognition.  It is loaded with vitamins, minerals, and protein and is very easy to integrate into your favorite recipes.  It is a really healthy option for lunch meal prep for during the week. We’re providing a great recipe here for a Mexican quinoa stew.

While lettuce is the traditional go-to for a salad base, cooking up some quinoa ahead of time is a wonderful way to enhance a salad.  Quinoa can also be paired with roasted, steamed, or even fresh vegetables – served both cold or warm.  It goes nicely with vegetables and maintains the most flavor when cooked with the vegetables for hours at a time.  That is why this Mexican quinoa stew is a real winner in both the quinoa and slow cooker arenas.

This is a delicious stew that includes wonderful Mexican flavors with nutritious quinoa.
  1. Combine all ingredients and spices into the slow cooker bowl. Set temperature on low for 6 hour or high for 3-4 hours.
  2. Mix the stew together and serve with a squeeze of lime, and some avocado. You can load into a tortilla for a little taco night, or eat straight out of a bowl.
