  1. Heat your pan with chili oil and sauté your onions and garlic until translucent. Add your remaining vegetables and cook until al dente.
  2. Stir in the curry paste until the vegetables are heated and coated. Slowly add the coconut milk, water, sugar, and tamarind. Bring the mixture to a simmer and allow to begin thickening.
  3. Add remaining ingredients until the sauce has thickened up and season to taste.
  4. Arrange bowls of rice and chickpeas and top with curry.
  5. Garnish with fresh chopped herbs.
