Instructions
  1. Using a food processor, roughly chop walnuts and mushrooms.
  2. Caramelize shallots and garlic in a pan.
  3. Add the mushrooms mix and zucchini. Cook for 5 minutes or until liquid from mushrooms is cooked out.
  4. Add the chilis, cumin, salt, pepper, and black beans. Stir well to combine and cook another minute then turn off the heat.
  5. Blend cheese ingredients in a high-speed blender until creamy
  6. Arrange in a tortilla and serve with salsa verde and cheese sauce.
