MUSHROOM QUINOA STROGANOFF

Usually made with beefs, delicious stroganoffs can also be made just with meaty mushrooms.  Our mushroom quinoa stroganoff is made with 3 types of mushrooms – guaranteed to please vegans and non-vegans alike.

Instructions
  1. Bring quinoa and liquid to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed about 20 minutes.
  2. Heat the oil in a large frying pan, and cook the onion, garlic and mushrooms over a medium heat until soft. Add the vegetable stock and paprika, and season with salt and pepper.
  3. Stir in the sour cream and parsley. Pour over quinoa and serve.
