Aquafaba can be used to create creamy mousses.  Here is a recipe for an easy, yummy dessert for you – an orange chocolate mousse.

  1. Melt your dark chocolate in the microwave. Stir in short intervals to make sure that the chocolate doesn’t burn. Set aside while preparing your mousse base.
  2. In a large mixing bowl, beat the aquafaba with your cream of tartar with an electric hand mixer. You are looking for the texture of soft peaks when you lift the whisks out.
  3. Whisk in the sugar, vanilla, and orange juice.
  4. With a spatula, fold in the melted chocolate until incorporated into the mousse. The mousse should be light and airy so you do not want to over-mix the contents.
  5. Chill for 6 hours or overnight, and top with orange zest to serve.
