RED PEPPER AND ROASTED CHICKPEA BUDDHA BOWL

Here is a roasted chickpea bowl with red peppers.  It is a single “Buddha Bowl” meal that is so popular with plant-based eaters.

Instructions
  1. Preheat oven to 425.
  2. Heat 2 cups water in a pot. When the water reaches a boil, add quinoa. Simmer for approximately 15 mins then remove from heat and keep covered for about 10 minutes.
  3. On a lined baking sheet, add chickpeas, oil, and spices. Roast chickpeas for 15 minutes.
  4. Add all dressing ingredients to a small food processor (or mini blender) and pulse until smooth.
  5. To arrange your bowl, add quinoa, mixed greens, avocado, and chickpeas. Drizzle everything with red pepper sauce, and garnish with chopped cilantro.
