ROSEMARY ROASTED CAULIFLOWER

ROSEMARY ROASTED CAULIFLOWER
Instructions
  1. Preheat the oven to 375 degrees.
  2. Cut the stem and leaves from your cauliflower but leave the core intact so the whole head is still one piece.
  3. Spread olive oil over the cauliflower head and season with salt, pepper, and rosemary.
  4. Place in a pan and pour ¼ cup of vegetable stock in the bottom of the pan. Roast covered for 30 mins and then uncover for an additional hour.
  5. In a large deep pan, heat olive oil and sauté all your mushrooms in batches until they soften and brown.
  6. Add the garlic and shallots until translucent.
  7. Stir in the flour and then add the liquid ½ cup at a time to allow for thickening. Once all the liquid ingredients are integrated, cook until the mixture is reduced by half.
  8. Remove your cauliflower from the oven and slice into large steaks.
  9. Serve with the marsala sauce and sprinkle with parsley to garnish.
