Delicious meals that can be made with spaghetti squash.  It is a great low-carb pasta alternative that can be adapted for many dishes.  Here’s an unusual one with a southwest flair.

Instructions
  1. Preheat the oven to 375 degrees.
  2. Place squash faces down in a deep pan. Pour 1/2 cup water into the dish, cover and bake until just tender (approx. 30 mins).
  3. Using a fork, separate the flesh throughout the skin to form noodle-like strands.
  4. Heat oil in a pan and add onion and peppers and cook until soft. Add beans, corn, chili powder, and paprika.
  5. Add cooked squash, cilantro, lime juice and salt to the pan cooking for a minute to heat up.
  6. Fill squash halves with filling and top with a dollop of guacamole and salsa to serve.
