Winter squashes can even be used in dessert recipes!  Here is squash coconut cream cake prepared from coconut flour and your choice of squash.  It is a simple, yummy finish to a great meal.

  1. Preheat oven to 350 degrees.
  2. Open a can of coconut milk and transfer the congealed coconut milk to a mixing bowl with a spoon. Drain the remaining liquid from the can. Add powdered sugar and beat with a mixer until the cream as created soft peaks. Reserve half of the cream in another bowl for garnish.
  3. Add coconut flour, coconut sugar, vanilla extract and baking powder to the bowl with the remaining cream (and any spices you choose). Mix well and add the squash 1/2 cup at a time. Continue mixing until the ingredients form a batter.
  4. Bake for 25 minutes or until cake has puffed in a round pan. The center will settle and form a bit of a well once cooled. Serve with a spoonful of the remaining cream and enjoy!
