Ingredients
- 1 tsp olive oil
- 1 chopped shallots chopped
- 1 yellow pepper sliced
- 1 orange pepper sliced
- 2 cups rice cooked
- 1 package tempeh
- 1/2 cup lentils cooked
- 1/2 cup black beans cooked
- 1 tomato chopped
- 2 tbsp scallions chopped
- 1 package corn tortillas

Instructions
- Sauté shallots and peppers in olive oil.
- Cube and steam tempeh. Add tempeh to vegetables.
- Stir in black beans.
- Arrange corn tortillas on a plate and later rice, veggie/tempeh mixture, tomato, scallions, and lentils. Roll and pan sear.
- Serve hot.
