THAI COCONUT BOWL

Our Thai Coconut Bowl is inspired by Asian sweet and sour flavors.  Additions of quinoa and edamame will round out this wonderful single bowl vegan meal.

Instructions
  1. Pour coconut milk, quinoa, water and maple syrup in a pot and bring to a boil. Reduce to a simmer and cook for 10 mins. Remove from heat.
  2. Preheat the oven to 400 degrees
  3. Season carrots, garlic and pineapple with salt and pepper. Toss with coconut oil and roast for 30 mins.
  4. Season cabbage and edamame in a bowl with dressing.
  5. Arrange quinoa, roasted veggies, and cabbage in a bowl. Top with peanuts and enjoy!
