Instructions
  1. Heat the oil in a pot and add the ginger, lemongrass paste, and cilantro into the oil. Stir in the red curry paste and garlic and mix well.
  2. Add the red peppers, carrots, scallions and mushrooms.
  3. Stir in broth and bring to a boil. Stir in the tofu slices.
  4. Reduce the heat to low, add the coconut milk. Simmer on low and stir occasionally. If you want a sweeter soup, coconut sugar can be added.
  5. Serve and enjoy!
