LOW FODMAP TOMATO & QUINOA SOUP

Although many vegetables are not suitable for people following low FODMAP diets to address gut issues, our tomato quinoa soup can be enjoyed.  This recipe include lots of healthy ingredients and great spices.

LOW FODMAP TOMATO & QUINOA SOUP

Instructions
  1. Heat the oil in a large pot with your spices.
  2. On medium/high heat, add the carrots, zucchini squash and a 1/2 cup of water.
  3. Allow to simmer for about 15 minutes, stir to ensure no sticking.
  4. Pour in the rest of your ingredients and bring the soup to a boil.
  5. Lower to medium flame and let it simmer for about 45 mins to an hour.
