LOW FODMAP TOMATO & QUINOA SOUP
Instructions
  1. Heat the oil in a large pot with your spices.
  2. On medium/high heat, add the carrots, zucchini squash and a 1/2 cup of water.
  3. Allow to simmer for about 15 minutes, stir to ensure no sticking.
  4. Pour in the rest of your ingredients and bring the soup to a boil.
  5. Lower to medium flame and let it simmer for about 45 mins to an hour.
