VEGAN SCRAMBLED EGG WRAP
salt and pepper
tortilla wrap (your choice – gluten free, sprouted, other other wrap)
Blend all your “egg” ingredients (until salt and pepper) in a blender. Pulse until the mixture reaches a smooth consistency.
Drizzle olive oil in the pan and heat. Add the egg mixture to the pan and let sit for a minute. Cover for 3 minutes to allow the mixture to set.
With a spatula, scramble the eggs for a remaining 10 minutes to firm up.
Spread your tortilla and fill with beans, scrambled eggs, and avocado. Top with salsa and roll up.
