VEGAN SCRAMBLED EGG WRAP
Instructions
  1. Blend all your “egg” ingredients (until salt and pepper) in a blender. Pulse until the mixture reaches a smooth consistency.
  2. Drizzle olive oil in the pan and heat. Add the egg mixture to the pan and let sit for a minute. Cover for 3 minutes to allow the mixture to set.
  3. With a spatula, scramble the eggs for a remaining 10 minutes to firm up.
  4. Spread your tortilla and fill with beans, scrambled eggs, and avocado. Top with salsa and roll up.
