  1. Preheat the oven to 400 degrees.
  2. In a bowl, toss your cauliflower florets with a tablespoon of olive oil, season with salt, pepper, and paprika and spread out on a baking sheet.
  3. Roast for 20 mins until the cauliflower is golden.
  4. Heat the remaining olive oil in a pan on the stove and sauté the onion, carrot, celery, and garlic. Keep stirring until the vegetables are soft.
  5. Add the roasted cauliflower, vegetables and remaining ingredients to a soup pot and bring to a boil. Blend with an immersion blender.
  6. Season with salt and pepper and serve.
